Juan Alcantara moved to the Northern Rockies from central Mexico in the late 1990’s. Starting as a line cook at one of the more popular restaurants in Teton Village, Juan honed his craft working under some of the top chefs in Jackson Hole.
Over a ten year-long apprenticeship, Juan worked as a sous chef in a variety of prominent Jackson Hole eateries, with menus that included Italian, Austrian, American (contemporary and classic/Western) and — of course! — Mexican.
We are pleased and proud to have Juan as provisions’ Chef, and we hope you enjoy his creations, presentations, and most of all, his enthusiasm for good hearty dishes.
THE PROVISIONS STORY
To mountain men back in the day, a large low-lying valley — such as this one on the Tetons’ western slope — was known as a “hole.” Trappers sought out these areas for the numerous rich streams that provided ample food and comfortable camping, in addition to beaver pelts. What we now know as Teton Valley was originally called Pierre’s Hole, in honor of “le grand Pierre” Tivanitagon, a Hudson’s Bay Company trader.
In the early to mid 1800’s, Pierre’s Hole was a strategic center of the fur trade in the northern Rocky Mountains. The “Mountain Man Rendezvous” was a summer event held in Teton Valley for fur trappers to gather, sell their furs, and then resupply themselves with provisions.
